Want an amazing and healthy side dish? Marinate sliced tomatoes with balsamic vinegar for 4-6 hours. Bake at 350 for about 7 minutes or a little tender. Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice (I chose Italian blend) and broil til cheese is golden!

Caprese Dip: Get one large log of fresh mozzarella, cut it into cubes. Take one package of cherry tomatoes, cut them in half and add them to the cheese. Take a handful of fresh basil, slice it into strips and dump on top of the tomatoes. Cook in the oven at 350 degrees until the cheese is completely melted and bubbly. Serve with french bread.
